Quick Fruit Cake

An easy and quick recipe to enjoy a moist and rich Christmas cake, you can start it the 23rd of December and it will be ready to enjoy on Christmas day.

You only need to get the brandy soaked fruits from the shop, and you are ready to go!




Ingredients

  • 650g Brandy soaked mixed fruits

  • 140g Plain flour

  • 1/4tsp Ground nutmeg

  • 1/2tsp Mixed spice

  • 200g Dark brown sugar

  • 200g Butter

  • 2 Large eggs

  • 2tbsp Brandy

  • Zest of 1 orange


Method

  1. Preheat the oven to 140ºC

  2. Prepare a 6in tin with greaseproof paper in the sides and the bottom

  3. Mix the dry ingredients in a bowl (flour, sugar, spices and zest)

  4. Add Butter and mix until fully incorporated

  5. Add the eggs one at a time and the brandy and mix at low speed

  6. Fold the mix fruits gently, scoop the batter into the tin and bake for 1.5 hours.

  7. When ready let it cool for around 10min, pierce with a bamboo stick and pour a little brandy on each hole, let it rest and repeat the following day.

  8. You can feed brandy for longer or enjoy!
